Cheesy Quinoa Latkes

Ingredients:

·         2 2/3 cups cooked quinoa

·         4 large eggs, beaten

·         ½ tsp. salt

·         ¼ tsp. pepper

·         2 tbsp. chopped parsley

·         2 tbsp. chopped basil

·         ½ small onion, finely chopped

·         1/3 cup parmesan or shredded cheese

·         3 cloves garlic, minced

·         ¾ cup breadcrumbs or raw oats

Oil for frying

Instructions:

Combine the quinoa, eggs, salt, and pepper in a large bowl. Stir in the onion, cheese, and garlic. Stir in the breadcrumbs or raw oats. Let the mixture sit for a few minutes so the crumbs or oats absorb some of the moisture. Form the Latkes and fry on medium heat for 5 to 7 Minutes each side.
